Easter Breakfast with Almark Cage-Free Hard-Boiled Eggs

Does anyone else feel like they are SO overwhelmed on Easter Sunday? Church, 3847934 egg hunts, lunch, dinner, and another egg hunt. This year we had my whole family over for easter breakfast and I discovered the easiest breakfast ever. This definitely doesn’t just have to be Easter either! You could totally do this whenever but we don’t usually do a huge family breakfast unless it’s some type of holiday!
You can prep all of this the night before! Here are your ingredients and what you will need
Double Egg Omelette Casserole
1-3 bell peppers (depending how peppery you want it)
4-6 packs of Almark Hard Boiled Eggs - chopped up - You can find these at Sams Club
2 cups of sharp cheddar cheese
2 cups of shredded hash browns
non stick cooking spray
8-10 cooked bacon or bacon bits (optional)
QUICK AND EASY TIP- You can chop up your peppers, onion, and hard boiled eggs the night before, measure out your cheese and put 2 cups in 2 separate zip lock bags ( 1 cup in the mix and one cup on top 5 minutes before it comes out) and make your bacon the night before. I found it’s easier to break up if its not hot.
Preheat your oven to 400
Scramble the eggs in a bowl and set aside
Coat your casserole dish with non stick spray/oil - I like avocado oil personally!
Put your frozen hash browns in the bottom of the pan
Add 1 cup of the sharp cheddar cheese
Crumble bacon and bread evenly over the cheese
Add your pre-chopped eggs into the dish
Add your pre chopped peppers and onions on top
Add your scrambled eggs
Cook in the oven for 15 minutes
Take out and add 1 cup of cheese to the top and bake an additional 5 minutes
I want to end with the cutest Easter table setting! I picked these plates up at TJ MAXX and then I got these little peeps at the dollar store! Who doesn’t love peeps (Just kidding.. who actually likes peeps)
